Corn pudding from maine

Ingredients

17 | ounces | Creamed corn; low calorie |
2 | Eggs; lightly beaten | |
½ | Skim milk | |
Salt and pepper to taste | ||
2 | tablespoons | Margarine; melted |
2 | tablespoons | Red pepper; chopped |
2 | tablespoons | Onion; chopped |
15 | Crackers; crushed |
Directions
Mix all ingredients except ¼ cup of the crushed crackers. Pour into 1½ quart buttered casserole. Sprinkle with reserved cracker crumbs. Bake in preheated 350 deg F oven for 1 hour or until center is firm.
