Corn pudding from maine

Ingredients

Quantity Ingredient
17 ounces Creamed corn; low calorie
2 Eggs; lightly beaten
½ Skim milk
Salt and pepper to taste
2 tablespoons Margarine; melted
2 tablespoons Red pepper; chopped
2 tablespoons Onion; chopped
15 Crackers; crushed

Directions

Mix all ingredients except ¼ cup of the crushed crackers. Pour into 1½ quart buttered casserole. Sprinkle with reserved cracker crumbs. Bake in preheated 350 deg F oven for 1 hour or until center is firm.
