Connie's pear chutney

10 | cups | Sliced, firm, ripe pears -- |

½ | cup | Finely chopped green pepper |
1½ | cup | Seedless raisins |
4 | cups | Sugar |
1 | cup | Chopped crystallized ginger |
3 | cups | Cider vinegar |
½ | teaspoon | Pickling salt |
½ | teaspoon | Allspice berries |
½ | teaspoon | Whole cloves |
3 | Cinnamon sticks -- 2\" long |
Place pears & next 6 ingredients in a saucepan. Tie allspice & cloves in a cheesecloth bag & add along with cinnamon. Cook slowly until pears are tender & mixture thick, about 1 hour.
Remove spices. Ladle into clean, hot half-pint jars, leaving ½ inch headspace. Seal. Process for 10 min in a boiling-water bath or steam canner.
