Connie's pear chutney

Measure Ingredient
10 cups Sliced, firm, ripe pears --
\N \N Abt 5 lb.s
½ cup Finely chopped green pepper
1½ cup Seedless raisins
4 cups Sugar
1 cup Chopped crystallized ginger
3 cups Cider vinegar
½ teaspoon Pickling salt
½ teaspoon Allspice berries
½ teaspoon Whole cloves
3 \N Cinnamon sticks -- 2\" long

Place pears & next 6 ingredients in a saucepan. Tie allspice & cloves in a cheesecloth bag & add along with cinnamon. Cook slowly until pears are tender & mixture thick, about 1 hour.

Remove spices. Ladle into clean, hot half-pint jars, leaving ½ inch headspace. Seal. Process for 10 min in a boiling-water bath or steam canner.
