1Chicken -- about 4 lbs
1Whole orange
½cupFresh unstrained orange
Juice
1teaspoonSalt
1teaspoonPepper
1teaspoonGround ginger 6 tablespoons liquid honey
½cupRed or white wine

Directions

Place chicken in roasting pan breast side down, place a whole orange inside the chicken. Combine the juice, salt, pepper and ginger and pour the mxture over. Roast uncovered at 350 for ½ an hour. Remove from the oven, turn it over and smear it with honey. Return to oven.

after 5 minutes baste it with wine and juices from the pan. If the breast seems to be browning to quickly, cover it with foil. baste it onc Remove the orange from the chicken and slive it to garnish when serving.
