Chipotles in adobo

8 Chipotles
1 Chopped onion
5 Cloves garlic
4 tablespoons Vinegar
5 tablespoons Ketchup
3 cups Water
1 pinch Salt

Add 4 tablespoons of vinegar. Add 5 tablespoons of ketchup. Add 3 cups of water. Add a pinch of salt. Simmer gently uncovered for about 1 hour. Store in a jar in the fridge. Use minced or pureed as required. Recipe from 'Cool Chile Company, London'.
