Chinese chicken pasta

½poundsShiitake mushrooms, stems removed and caps sliced
1tablespoonFinely chopped fresh ginger
½teaspoonMinced garlic
1cupChicken broth
2tablespoonsSoy sauce
teaspoonAsian sesame oil
¼teaspoonFreshly ground pepper
2cupsDiced cooked chicken
¼cupSliced green onions
1bunchSpinach (10 oz.), washed and chopped
1poundsSpaghetti, cooked according to package directions

Directions

Heat vegetable oil in large skillet over medium-high heat. Add mushrooms; cook 5 minutes. Add ginger and garlic; cook 1 minute more. Add chicken broth, soy sauce, sesame oil and pepper; bring to boil and cook 1 minute.

Add cooked chicken, green onions and spinach. Toss with hot pasta.
