½ pounds | Shiitake mushrooms, stems removed and caps sliced |
1 tablespoon | Finely chopped fresh ginger |
½ teaspoon | Minced garlic |
1 cup | Chicken broth |
2 tablespoons | Soy sauce |
1½ teaspoon | Asian sesame oil |
¼ teaspoon | Freshly ground pepper |
2 cups | Diced cooked chicken |
¼ cup | Sliced green onions |
1 bunch | Spinach (10 oz.), washed and chopped |
1 pounds | Spaghetti, cooked according to package directions |
Heat vegetable oil in large skillet over medium-high heat. Add mushrooms; cook 5 minutes. Add ginger and garlic; cook 1 minute more. Add chicken broth, soy sauce, sesame oil and pepper; bring to boil and cook 1 minute.
Add cooked chicken, green onions and spinach. Toss with hot pasta.
