Chinese chicken pasta

Yield: 6 Servings

Measure Ingredient
1 tablespoon Vegetable oil
½ pounds Shiitake mushrooms, stems removed and caps sliced
1 tablespoon Finely chopped fresh ginger
½ teaspoon Minced garlic
1 cup Chicken broth
2 tablespoons Soy sauce
1½ teaspoon Asian sesame oil
¼ teaspoon Freshly ground pepper
2 cups Diced cooked chicken
¼ cup Sliced green onions
1 bunch Spinach (10 oz.), washed and chopped
1 pounds Spaghetti, cooked according to package directions

Heat vegetable oil in large skillet over medium-high heat. Add mushrooms; cook 5 minutes. Add ginger and garlic; cook 1 minute more. Add chicken broth, soy sauce, sesame oil and pepper; bring to boil and cook 1 minute.

Add cooked chicken, green onions and spinach. Toss with hot pasta.
