1 can | (14 oz) beef broth |
3 tablespoons | Fresh lemon juice |
1½ tablespoon | Honey |
⅛ teaspoon | Caraway seed |
⅛ teaspoon | Salt |
1 \N | Whole clove |
\N \N | Sour cream; for garnish |
\N \N | Chopped green onions; for garnish |
In an electric blender container, combine beets and their liquid, broth, lemon juice, honey, caraway seed, salt and clove. Whirl smooth and chill well. Stir just before serving. Garnish each serving with a dollop of sour cream and a little chopped onion.
