Chicken with artichokes ^

4Chicken breast halves
1cloveGarlic, minced
½teaspoonSalt
¼teaspoonPepper
½cupChicken broth
¼cupWhite wine
1pack(10 oz) frozen artichoke hearts, thawed
1tablespoonCornstarch mixed with
1tablespoonCold water
2tablespoonsLemon juice
3Eggs, beaten
2tablespoonsChopped parsley

Directions

Melt butter in heavy skillet. Brown chicken, then add garlic; saute for 3 minutes. Add salt, pepper, chicken broth and wine. Cover and simmer for 30 minutes. Add artichoke hearts and simmer, covered, for 10 minutes more. 4 servings.
