Ingredients

8Chicken Pieces, small
1ouncePlain flour
3tablespoonsOlive oil
3Cloves garlic, crushed
2Bay leaves
300millilitresRed wine
Salt and pepper
4ouncesBlack olives
14ouncesCan tomatoes
Chopped parsley to garnish

Directions

Coat chicken pieces in flour. Fry in oil until golden brown. Remove and drain off excess fat. Return chicken to pan, add garlic, bay leaves, wine and seasoning. Simmer for 20 mins.
