Chicken breasts with easy peanut sauce

Ingredients

QuantityIngredient
4Chicken breast; no skin, no bone, R-T-C
½largeOnion; sliced
2tablespoonsCooking oil
½cupSherry
1cupPeanut butter; chunky
1canChicken broth
½teaspoonGarlic powder
1teaspoonDry mustard

Directions

Heat oil in skillet. Saute onions. Add chicken and brown on both sides.

Transfer chicken to heat proof dish and put in 300" oven. Deglaze skillet with sherry. Add remaining ingredients and reduce to desired thickness.

Arrange chicken on platter and cover with sauce.
