Chicken breast with yogurt and lime

½ | cup | Taco sauce |
¼ | cup | Dijon mustard |
2 | tablespoons | Fresh lime juice |
3 | Whole chicken breasts, skinned and split | |
2 | tablespoons | Butter or margarine |
6 | tablespoons | Plain yogurt |
6 | slices | Of lime |
Fresh coriander or parsley, for garnish 1. In a large bowl, combine taco sauce, mustard, and lime juice. Add chicken breasts and marinade at room temperature for 30 minutes.
Remove chicken; reserve marinade.
2. In a large frying pan, melt butter over medium heat. Add chicken breasts and cook 3 to 5 minutes a side, until lightly browned. Add marinade to pan and cook, turning chicken once or twice, until fork tender. Remove to a warm platter.
3. Raise heat to high and boil marinade 1 minute. Pour over chicken.
Top each chicken breast with 1 tablespoon yogurt and a slice of lime.
Garnish with coriander.
Makes 4 servings.
