Carrot bulgar pilaf

2Carrots; peeled and grated
2tablespoonsButter, marg. or veg. oil
1cupBulgar wheat
1canLow-sodium chicken broth
¼teaspoonPepper
¼cupCilantro or parsley, chopped

Directions

In a medium pot on med high heat melt butter and add carrots and bulgar. Cook 2-3 min stirring constantly. Add broth and pepper, cover and simmer 15-20 min until broth absorbed and bulgar is tender.
