Carrot & raisin muffins #1

Yield: 12 Servings

Measure Ingredient
1¼ cup Flour
¾ cup Creamota (quick cooking rolled oats)
2 teaspoons Baking powder
¼ teaspoon Salt
¾ cup Milk
1 cup Grated carrot
¾ cup Raisins
½ teaspoon Cinnamon
1 \N Egg
3 tablespoons Oil

Mix flour, creamota, b/pdr & salt. Stir in carrot, raisins & cinnamon. Beat egg, milk & oil. Make a well in centre of dry ingredients, pour in liquid.

Mix lightly. ¾ fill greased muffin pans & bake at 375øF for 15-20 mins.
