|1 cup||Raw apple cider or applejack|
|¼ cup||Lime juice|
|3 \N||Cloves garlic; minced|
|½ teaspoon||Coarsely ground black pepper|
|½ teaspoon||Ground papaya seed|
|1 \N||1-pound skirt steak|
For marinade, combine all ingredients. Sprinkle papaya seed over steak; Marinate for at least 4 hours, turning several times. barbecue over mesquite coals or broil to desired doneness. Slice steak against the grain.
Serves 2 to 4. Variation: Beer may be substituted for the applejack.
