Carne asada (cooked meat)

Yield: 1 Servings

Measure Ingredient
1 cup Raw apple cider or applejack
¼ cup Lime juice
3 \N Cloves garlic; minced
½ teaspoon Coarsely ground black pepper
½ teaspoon Ground papaya seed
1 \N 1-pound skirt steak



For marinade, combine all ingredients. Sprinkle papaya seed over steak; Marinate for at least 4 hours, turning several times. barbecue over mesquite coals or broil to desired doneness. Slice steak against the grain.

Serves 2 to 4. Variation: Beer may be substituted for the applejack.
