| ¼ | cup | Lime juice |
| 3 | Cloves garlic; minced | |
| ½ | teaspoon | Coarsely ground black pepper |
| ½ | teaspoon | Ground papaya seed |
| 1 | 1-pound skirt steak | |
Directions
MARINADE
STEAK
For marinade, combine all ingredients. Sprinkle papaya seed over steak; Marinate for at least 4 hours, turning several times. barbecue over mesquite coals or broil to desired doneness. Slice steak against the grain.
Serves 2 to 4. Variation: Beer may be substituted for the applejack.
