Bourbon squash rings

Measure Ingredient
2 larges Acorn squash, cut into 1/2 in. rings & seeded
\N \N Bourbon
¼ cup Butter, melted
2 eaches Tb brown sugar
¼ teaspoon Fresh grated nutmeg

YIELDS: 8 SERVES

Preheat oven to 375oF. Line baking dish with aluminum foil. Arrange squash rings in single layer on foil. Prick with fork. Brush rings generously with bourbon. Let stand 5 mins. to absorb liquor. brush evenly with melted butter. Sprinkle with brown sugar and nutmeg. Bake until tender, about 20 mins. Serve immediately.
