Bourbon carrot cake with bourbon glaze

Yield: 16 Servings

Measure Ingredient
⅔ cup Oil
1 cup Sugar
2 Eggs
1 cup Flour
1 teaspoon Baking powder
1 teaspoon Baking soda
½ teaspoon Salt
½ teaspoon Cinnamon
¼ teaspoon Nutmeg
3 tablespoons Bourbon
1½ cup Grated carrots
1 cup Chopped pecans
1 cup Powdered sugar
2 tablespoons Hot water
1 tablespoon Bourbon

BOURBON GLAZE

Stir in flour, baking powder, soda, salt, cinnamon and nutmeg. Add bourbon, carrots and pecans and mix well. Pour into greased and floured 9x9-inch cake pan. Bake at 325 F for 40 minutes. Cool in pan.

Bourbon glaze: Blend together and spread over cooled cake.
