1 \N 3 lb large beef tongue
1 \N Onion, quartered
1 \N Carrot, sliced
3 \N Ribs of leafy celery
6 \N Sprigs of parsley
2 \N Bay leaves
10 \N Peppercorns, cracked
1 \N Dried chile, optional

See about tongue. Simmer the tongue 3 hours with the seasonings.
