Black-eye pea skillet

Yield: 6 Servings

Measure Ingredient
1 pounds 93% lean ground beef
1 \N Onion; chopped
1 \N Green pepper; chopped
32 ounces Black-eyed peas; drained
16 ounces Can diced tomatoes
1 teaspoon Salt
1 teaspoon Sugar
½ teaspoon Pepper
¼ teaspoon Garlic; minced
3 \N Mini cornbread loaves; warm, split lengthwise


Brown beef and drain. Stir in green pepper and onion. Cook until tender.

Add other ingredients. Bring to a boil and simmer for 20 minutes, stirring occasionally. Serve over cornbread.
