Black-eyed pea spread

1x15 oz can black-eyed peas or
cupCooked black eyed peas
¼cupFresh parsley, tight pack
2tablespoonsLemon Juice
2tablespoonsOlive oil
1xLarge garlic clove, chopped
½teaspoonDried tarragon
¼teaspoonPepper
1xSalt, to taste

Directions

Reserve a few peas for garnish and place the remaining peas in food processor along with parsley, lemon juice, olive oil, garlic, tarragon and pepper. Process until smooth. Taste and adjust seasonings, adding salt if desired. Transfer to a serving bowl and garnish with reserved peas. Serve with toasted slices of french bread or crackers.
