Black bean-corn salad with cilantro vinaigrette

½gallonCorn Kernals, Blanched
1eachRed Bell Pepper, diced 1/4\"
4bunchesScallions, white part only, cut 1\"
4eachesGreen Jalapenos, sliced
½bunchCilantro Leaves, whole
Vinaigrette:
3eachesShallots, minced
1cupWhite Wine Vinegar
2cupsCorn Oil
1tablespoonSalt
1tablespoonFresh Ground Black Pepper
1tablespoonGround Cumin
1teaspoonCayenne

Directions

Salad:

Whisk together all ingredients by hand. To assemble salad, toss together beans, corn, bell pepper, scallions and cilantro and add 12 oz. of vinaigrette. Garnish with sliced jalapenos.
