12 ounces | Ground turkey sausage |
1 can | Reduced-sodium chicken broth; (14.5 oz.) |
1 can | Black beans; (15 oz.) rinsed and drained |
1 can | Golden hominy; (14.5 ounce) rinsed and drained |
1 can | Mexican-style stewed tomatoes; (14.5 ounce) NOT drained |
1 cup | Frozen loose-pack diced hash browns |
½ cup | Sweet green peppers; chopped |
⅓ cup | Onion; chopped |
1 \N | Clove garlic; minced |
½ teaspoon | Chili powder |
1 teaspoon | Dried oregano; crushed |
In large saucepan, brown sausage. Add green pepper, onion, garlic and cook until tender. Stir in broth, black beans, hominy, tomatoes, potatoes, chili powder and oregano. Bring to boiling; reduce heat. Cover and simmer 30 minutes.
Serves 6.
NOTES : Made 11-6-97. Added ½ tsp. more chili powder and 1 green chili, chopped. Used Jimmy Dean pork sausage.
