Black bean and sausage posole

Yield: 1 Servings

Measure Ingredient
12 ounces Ground turkey sausage
1 can Reduced-sodium chicken broth; (14.5 oz.)
1 can Black beans; (15 oz.) rinsed and drained
1 can Golden hominy; (14.5 ounce) rinsed and drained
1 can Mexican-style stewed tomatoes; (14.5 ounce) NOT drained
1 cup Frozen loose-pack diced hash browns
½ cup Sweet green peppers; chopped
⅓ cup Onion; chopped
1 \N Clove garlic; minced
½ teaspoon Chili powder
1 teaspoon Dried oregano; crushed

In large saucepan, brown sausage. Add green pepper, onion, garlic and cook until tender. Stir in broth, black beans, hominy, tomatoes, potatoes, chili powder and oregano. Bring to boiling; reduce heat. Cover and simmer 30 minutes.

Serves 6.

NOTES : Made 11-6-97. Added ½ tsp. more chili powder and 1 green chili, chopped. Used Jimmy Dean pork sausage.
