Batas a portuguesa - portuguese fried potatoes

Measure Ingredient
¼ cup Butter
¼ cup Oil (olive oil may be used)
750 grams Potatoes, peeled and sliced 1/4\" thick rounds
½ \N Level teaspoon salt
½ \N Freshly ground black pepper
1 \N Level tablespoon finely chopped parsley

1. in a pan heat butter and oil. fry potatoes on both sides until golden brown. 2. season potatoes with salt and pepper, transfer to a heated plater and serve immediately sprinkle with parsley. serves 4
