Yield: 1 pie (9")
|2 teaspoons||Pumpkin pie spice|
|1¾ cup||Pumpkin; canned|
|1 cup||Milk, evaporated|
|1||Pie shell (9"); unbaked|
|1 cup||Cream, whipping|
Mix well-beaten eggs, sugar, spice, salt, and pumpkin. Add milk and water; stir until smooth. Pour into pie shell. Bake at 425 degrees for 45 to 55 minutes or until mixture is firm and crust is well browned. Just before serving, spoon whipped cream in a circle on pei.
Arrange slices of banana in the whipped cream.
