Banana carrot

Yield: 12 servings

Measure Ingredient
4 tablespoons Applesauce -- at room
Temperature
2 Egg whites -- whipped
1 cup Bananas -- mashed
¾ cup Carrots -- grated
1 teaspoon Vanilla
2 cups Unbleached flour
¾ cup Granulated sugar
2 teaspoons Baking powder
½ teaspoon Cinnamon
½ teaspoon Salt
¼ teaspoon Baking soda
⅛ teaspoon Cloves

Preheat oven at 350. Prepare pan(s) with cooking spray and flour.

In a mixing bowl, combine applesauce, egg whites, bananas, carrots, and vanilla. In another mixing bowl, combine flour, sugar, baking powder, cinnamon, salt, baking soda, and cloves. Mix wet ingredients with dry ingredients just until moistened. Pour into prepared pan(s) and bake for 1 hour depending on pan size.
