Baked pumpkin - sl 10/82

3 | cups | Pumpkin; cooked and mashed |
2 | eaches | Eggs; beaten |
½ | cup | Pecans; chopped |
2 | tablespoons | Sugar |
2 | tablespoons | Butter or margarine; melted |
½ | teaspoon | Salt |
¼ | teaspoon | Ground mace |
1 | dash | Pepper |
½ | cup | Pecan halves |
½ | cup | Brown sugar; firmly packed |
¼ | cup | Maple or maple-flavored syrup |
Combine first 8 ingredients, stirring well. Pour pumpkin mixture into a lightly greased 1-½ quart casserole. Arrange pecan halves on top of casserole.
Combine brown sugar and syrup in a small saucepan; cook, stirring constantly, over medium heat until mixture reaches a boil. Cool slightly. Spoon glaze evenly over casserole. Bake, uncovered, at 350 degrees F for 40 minutes. Yield: 6 servings.
