Baked pork with pecans

2 | tablespoons | Pecans; toasted |
2 | tablespoons | Cornmeal |
1 | Clove garlic; minced | |
1½ | teaspoon | Sage; or 1-1/2 Tbs. fresh, chopped |
¼ | teaspoon | Cayenne pepper |
1 | tablespoon | Egg white |
1 | pounds | Pork tenderloin chops; cut into 1/2 inch thick slices |
3 | tablespoons | Dijon mustard |
1½ | teaspoon | Water |
Directions
Prep: 5 min, Cook: 40 min.
Preheat oven to 400øF. Combine first 6 ingredients and salt to taste in a bowl. Whisk in egg white. Place pork slices between two sheets of wax paper and pound lightly with a mallet or other heavy flat object to flatten slightly. Combine mustard and water in a bowl. Dip pork slices in mustard mixture. Dredge in breadcrumbs, shaking off excess. Press breadcrumbs to hold. Place pork in a single layer on an oiled baking pan. Bake 40 minutes or until coating is browned and crispy.
