Yield: 4 servings
|4 cups||Baby carrots|
|¼ cup||Minced fresh mint|
|1 tablespoon||Minced fresh ginger|
Steam the carrots over boiling water until tender, 3-5 minutes.
Remove from the heat, drain and save 2 tb. of the cooking water.
In a bowl, while the carrots are still hot, toss with the cooking broth, mint, and ginger. Serve immediately.
