Asparagus potato quiche

2mediumsPotatoes; peeled grated

1smallOnion; diced
1cloveGarlic; crushed
3Eggs;
3tablespoonsDiced ham;
3tablespoonsCheddar cheese; grated
1tablespoonGreen onions; chopped
16-1/2 oz pasty crust; prepared

Directions

Melt butter or margarine, add onion and garlic and fry until onions are transparent. Add diced asparagus and fry 2 more minutes. Add grated potatoes, whisk in eggs, ham, cheese and chives. Add salt and pepper if desired. Pour into prepared pastry crust and bake 350 degrees for 1 hour, garnish with diced tomatoes. Served 6.
