Asparagus potato quiche

Yield: 6 servings

Measure Ingredient
6 Asparagus sprigs, diced discard tough ends)
2 mediums Potatoes; peeled grated
3 tablespoons Butter -=OR=-
1 small Onion; diced
1 clove Garlic; crushed
3 Eggs;
3 tablespoons Diced ham;
3 tablespoons Cheddar cheese; grated
1 tablespoon Green onions; chopped
1 6-1/2 oz pasty crust; prepared

Melt butter or margarine, add onion and garlic and fry until onions are transparent. Add diced asparagus and fry 2 more minutes. Add grated potatoes, whisk in eggs, ham, cheese and chives. Add salt and pepper if desired. Pour into prepared pastry crust and bake 350 degrees for 1 hour, garnish with diced tomatoes. Served 6.
