|1 small||Head of cabbage; shredded|
|1 cup||Red cabbage; shredded|
|1 large||Carrot; shredded|
|½ cup||Sweet onions; minced|
|½ cup||Green bell pepper; minced|
|1 teaspoon||Garlic; minced|
|1 teaspoon||Fresh tarragon; minced|
|1½ cup||Light mayonnaise; (or more to taste)|
|¾ cup||Cider vinegar|
|2 tablespoons||Olive oil|
|1 teaspoon||Dried cilantro; chopped|
|½ teaspoon||Lemon-pepper; (with salt)|
Mix Dressing ingredients and stir well, until smooth. Set aside.
Prepare the vegetables and mix together well.
Fold the dressing into the vegetable mixture and stir until dressing and vegetables are evenly distributed.
Taste and adjust accordingly.
