Ambrosia's famous christmas cake

1teaspoonBrandy extract and/or
¼cupBrandy
1cupSweet shredded coconut
1cupGolden brown sugar
1cupDark old fashioned brown sugar
1poundsUnsalted butter
¾cupPineapple wedges
¾cupMixed fruit
¾cupLexia raisins
¾cupThompson raisins
¾cupGolden raisins
¾cupChopped dates
¾cupChopped pecans
¾cupSliced blanched almonds
¾cupChopped walnuts
½cupCitron peel
½cupOrange and lemon peel
½cupAssorted melon cubes
½cupGlace cherries
½cupGreen cherries
½cupCurrants
½cupBlackstrap molasses
½cupPure apple juice
12Egg yolks
12Egg whites

Directions

Mix fruit with 2 cups flour mixture. Heat oven to 275 degrees. line with wax paper and grease 6 loaf pans 8" x 4½" X 2 ½" deep. Beat butter and brown sugar until fluffy. Mix in egg yolks. Then mix in alternately just until smooth remaining flour mixture, juice and molasses. Turn into a large container and stir in fruit mix by hand. beat egg whites until soft peaks are formed and fold in to mixture.

Bake for approximately 2 hours. yields 6 loaves Wrap well in foil. Can add brandy or rum at intervals.

Decorations: Pineapple rings, maraschino cherries,pecans and or walnut halves marzipan, etc....
