¾ | cup | Dry lentils |
¼ | cup | Brown rice |
1 | Slightly beaten egg | |
½ | cup | Shredded Swiss cheese |
¼ | cup | Chopped onion |
¼ | cup | Fine dry bread crumbs |
¼ | cup | Snipped parsley |
¼ | cup | Toasted wheat germ Pam non-stick spray |
⅓ | cup | Chopped green pepper |
¼ | cup | Chopped carrot |
Directions
Cook lentils and rice in 3½ cup water, simmer, covered 45-50 minutes. Drain and mash slightly. Cool 15 minutes. Stir in egg, cheese, onion, crumbs, parsley and ½ teaspoon salt. Shape into 4 patties, 1 inch thick. Coat with wheat germ. Spray skillet with Pam, cook patties over medium heat 3 minutes on each side (or bake in 450 degree oven 10 minutes). Cook carrot and pepper in boiling water just until tender. Serve each pattie topped with cooked vegetables.
