Yeast free chicken barley soup

Ingredients

Chicken parts (backs, necks whatever) water
2Bay leaves;
1pinchBasil;
1cloveGarlic; minced
2tablespoonsFresh parsley; chopped
4To 5 scallions; chopped
½poundsSnow peas;
5Carrots; chopped
2Stalks celery; chopped
pinchOf thyme; oregano;
Salt and pepper to taste
2Tomatoes; chopped
½cupBarley;

Directions

Place chicken in soup pot. Fill ¾ ful with water. Add bay leaves, basil, garlic and parsley. Cover, bring to a boil, and simmer 1 hour.

Meanwhile, prepare vegetables. sEt aside. When chicken is tender, remove from pot, let cool and remove meat from bones. Place meat back into soup pot. Add remaining ingredients and simmer as long as possible, but for at least 1 more hour.
