Winter vegetable puree

Yield: 4 servings

Measure Ingredient
1 large Celery Root, Trimmed, Peeled
Cut in 1/2" cubes
2 mediums Baking Potatoes, Peeled --
Cut in 1" cubes
2 mediums Turnips, Peeled -- cut in
½ " cubes
4 mediums Leeks, White Parts Only,
Washed Well -- cut across
In 1" pcs
1 tablespoon Kosher Salt -- plus more to
Taste
Pepper, Freshly Ground -- to
Taste

Combine the celery root, potaotes, turnips, and leeks in a large saucepan and cover with cold water. Place over medium-high heat and bring to a boil. Reduce heat and simmer until all of the vegetables are tender, about 30 mins. Drain well and pass the vegetables through a ricer. Add salt and pepper to taste. Divide among 4 plates and serve immediately. Serves 4 as a side dish.
