Wheat-germ carrot cake

Measure Ingredient
1½ cup Cooking oil
2 cups Packed brown sugar
4 \N Eggs
1 tablespoon Grated orange peel
1½ teaspoon Vanilla extract
3 cups Grated carrots
1½ cup Wheat germ
2 cups Flour
3 teaspoons Baking powder
1½ teaspoon Salt
1½ teaspoon Cinnamon
¾ teaspoon Nutmeg
1 cup Raisins
¾ cup Chopped pecans

Mix in orange peel, vanilla and carrots. In separate bowl, combine wheat germ, flour, baking powder, salt, cinnamon and nutmeg. Stir into carrot mixture. Add raisins and pecans.

Turn into greased and floured 10-inch bundt pan. Bake in 350 F oven 60 - 70 minutes, or until cake passes the toothpick test. Cool in pan 10 minutes.

Remove to cake rack to finish cooling.
