Tuscan rice and beans

Ingredients

¼cupOlive oil
1cupOnions, chopped
2Cloves garlic, minced
½poundsSpinach leaves, washed, stemmed
2cupsCanned tomatoes, drained, chopped
quartCooked rice
3cupsWhite beans, cooked
3tablespoonsFresh mint, chopped
2tablespoonsDried rosemary, crushed
2tablespoonsRed wine vinegar
2tablespoonsSherry
1pinchSalt
1pinchGround black pepper

Directions

1.Saute onions in oil until tender. Add garlic, tomatoes and spinach; saute 3 to 5 minutes or until spinach is wilted.

2.Add remaining ingredients; heat thoroughly and serve.
