Tuscan white beans with sage

Ingredients

½cupOlive oil, divided
2ouncesProsciutto or pancetta, chopped fine
1smallOnion, sliced
3Garlic cloves, crushed
8Fresh sage leaves, chopped
2cansCannellini beans, rinsed and drained
Salt to taste
Pepper to taste
Fresh sage for garnish

Directions

In a small skillet heat 1 tablespoon olive oil and saute meat, onion and garlic 8-10 minutes, or until onion is tender. Stir in sage and cook 1 minute. Add beans and remaining olive oil, salt and pepper to taste and toss gently, taking care not to break the beans. Transfer to a serving dish and garnish with sage.
