Tuna steaks moroccan style

Ingredients

| ½ | teaspoon | Ground cumin |
| 1 | teaspoon | Turmeric |
| ¼ | teaspoon | Ground anise seed |
| ½ | teaspoon | Ground ginger |
| ⅛ | teaspoon | Ground cinnamon |
| ¼ | teaspoon | Red hot pepper flakes |
| Salt and white pepper | ||
| 4 | eaches | Tuna steaks (1-1/2# total, 1-1/2\" thick) |
| 1 | each | Tb lemon juice |
| 2 | eaches | Tb olive oil |
| 2 | eaches | Tb melted butter |
| 4 | eaches | Tb coarsely chopped coriander |
Directions
Combine spices. Rub steaks with mixture, sprinkle with lemon juice and olive oil. Cover with plastic wrap and let stand till ready to cook.
If broiling: Arrange on rack and place under very hot broiler, 4" from heat. Broil 4 minutes with door partly open, turn and cook on other side 3-4 minutes. For rare, cook less. Steaks should be well browned. If pan frying: Heat large cast iron skillet. Do not add fat.
When hot, add steaks in one layer and cook until well browned, 3 minutes per side. Place steaks on warm plates, brush with melted butter, sprinkle with coriander. Serve with couscous. Yield: 4 servings
