Tuna steaks moroccan style

Measure Ingredient
1 teaspoon Paprika
½ teaspoon Ground cumin
1 teaspoon Turmeric
¼ teaspoon Ground anise seed
½ teaspoon Ground ginger
⅛ teaspoon Ground cinnamon
¼ teaspoon Red hot pepper flakes
\N \N Salt and white pepper
4 eaches Tuna steaks (1-1/2# total, 1-1/2\" thick)
1 each Tb lemon juice
2 eaches Tb olive oil
2 eaches Tb melted butter
4 eaches Tb coarsely chopped coriander

Combine spices. Rub steaks with mixture, sprinkle with lemon juice and olive oil. Cover with plastic wrap and let stand till ready to cook.

If broiling: Arrange on rack and place under very hot broiler, 4" from heat. Broil 4 minutes with door partly open, turn and cook on other side 3-4 minutes. For rare, cook less. Steaks should be well browned. If pan frying: Heat large cast iron skillet. Do not add fat.

When hot, add steaks in one layer and cook until well browned, 3 minutes per side. Place steaks on warm plates, brush with melted butter, sprinkle with coriander. Serve with couscous. Yield: 4 servings
