Tomato, onion and zucchini salad

1largeOnion; thinly sliced
1tablespoonChopped fresh basil or 1 teaspoon dried; crumbled
1tablespoonChopped fresh oregano or 1 teaspoon dried; crumbled
6tablespoonsOlive oil
3tablespoonsBalsamic vinegar or 2 tablespoons red
; wine vinegar
Salt and pepper

Directions

Place alternating slices of tomatoes, zucchini and onion on serving platter. Sprinkle with herbs. Whisk together oil and vinegar and pour over salad. Season with salt and pepper. Cover and refrigerate at least 2 and up to 4 hours.
