Stir-fried beef and sprouts

1teaspoonSesame oil

1poundsFresh large sprouts; (mung beans,sunflower, radish or lentil)
2Green onions; trim, cut in 1\" piec

Directions

With sharp knife, cut beef across the grain into slices about 3 inches long and ¼ inch thick. In bowl, combine beef, garlic, soy sauce, 1 tablespoon oil, 1 teaspoon cornstarch and ½ teaspoon sugar, the sesame oil, and salt; set aside.

Just before serving, heat wok or large skillet over high heat until very hot. Add 1 tablespoon oil and swirl it around. Add half of beef and stir-fry until lightly browned on all sides. Transfer beef to bowl and repeat with remaining oil and beef. Transfer beef to bow.

Reheat wok over high heat. Stir in sprouts and green onions; restir cornstarch mixture and pour into wok. Cook until thickened and bubbly.

Return beef and stir-fry until heated through. Transfer to serving dish and serve immediately.

NOTES : When served with rice, this no-fuss stir-fry makes a great famil meal.
