Stewed fruit with brown sugar and vanilla

Measure Ingredient
4 cups Water
½ cup Firmly packed brown sugar
300 grams Mixed dried fruit or your choice
2 \N Hard peaches; sliced and stones
\N \N ; discarded
2 \N Hard pears; peeled and
\N \N ; quartered
4 \N Orange slices
1 \N Cinnamon stick
1 \N Vanilla bean; split lengthwise
\N \N Plain yoghurt or sour cream
\N \N Ground cinnamon

Combine all ingredients except yoghurt and ground cinnamon in a heavy medium saucepan. Bring to boil, stirring until sugar dissolves.

Reduce heat and simmer until fruit softens, stirring occasionally, about 20 minutes.

Transfer the fruit to a glass bowl, using a slotted spoon. Boil remaining liquid until reduced to 1 cup, about 10 minutes.

Pour the syrup over fruit, discarding orange slices. Serve warm, room temperature or chilled, topping with dollop of yoghurt and dusting of cinnamon.
