2poundsSalt cod soaked overnight
4Potatoes diced
4mediumsOnions chopped
2Cloves garlic chopped fine
1largePimento chopped
4tablespoonsOlive oil

Directions

Drain cod and rinse several times to remove salt. Heat oil and saute' onions,garlic,and pepper until vegetables are soft. Add cod and potatoes.

Simmer covered for about 30 minutes or until fish is cooked. Season with salt and pepper to taste.Garnish with sprigs of parsley. Serve with Portuguese or Italian bread
