Steamed rockfish with hoisin and spinach

1teaspoonOrange peel -- finely grated
1⅓poundsRockfish fillet
8Spinach leaves -- stems removed and washed and dried
4Lemon wedges

Directions

Combine the hoisin sauce, sesame oil, salt and orange peel.

spread on fish fillets. Top with spinach leaves.

Place the fish on a rack set above boiling water. ( A roasting pan fitted with a rectangular cake rack, set above the water, or use a bamboo steamer.) Cover with foil and steam 12 minutes per inch of thickness, or until fish tests done (140 degrees on and instant read thermometer.) Recipe By :
