Steamed rockfish with hoisin and spinach

Yield: 4 servings

Measure Ingredient
2 tablespoons Hoisin sauce
2 teaspoons Sesame oil
¼ teaspoon Salt
1 teaspoon Orange peel -- finely grated
1⅓ pounds Rockfish fillet
8 Spinach leaves -- stems removed and washed and dried
4 Lemon wedges

Combine the hoisin sauce, sesame oil, salt and orange peel.

Place the fish on a rack set above boiling water. ( A roasting pan fitted with a rectangular cake rack, set above the water, or use a bamboo steamer.) Cover with foil and steam 12 minutes per inch of thickness, or until fish tests done (140 degrees on and instant read thermometer.) Recipe By :
