Steamed rockfish with hoisin and spinach

Ingredients

| 2 | teaspoons | Sesame oil |
| ¼ | teaspoon | Salt |
| 1 | teaspoon | Orange peel -- finely grated |
| 1⅓ | pounds | Rockfish fillet |
| 8 | Spinach leaves -- stems removed and washed and dried | |
| 4 | Lemon wedges | |
Directions
Combine the hoisin sauce, sesame oil, salt and orange peel.
spread on fish fillets. Top with spinach leaves.
Place the fish on a rack set above boiling water. ( A roasting pan fitted with a rectangular cake rack, set above the water, or use a bamboo steamer.) Cover with foil and steam 12 minutes per inch of thickness, or until fish tests done (140 degrees on and instant read thermometer.) Recipe By :
