Steak & onion salad

1 | pounds | Flank steak |
1¼ | teaspoon | Salt |
¼ | teaspoon | Ground black pepper |
4 | cups | Leaf lettuce; in pieces |
1 | medium | Onion; thinly sliced (2 c) |
2 | cups | Cucumber; thinly sliced |
1 | cup | Sweet red bell pepper; sliced |
¼ | cup | Olive oil |
3 | tablespoons | Lime juice |
¼ | cup | Fresh dill; chopped |
Directions
Preheat broiler. Season steak with ¼ tsp of the salt and ⅛ teaspoon of the ground black pepper.
Broil 1 to 2 inches from the heat until desired doneness (3 to 4 minutes per side for medium-rare).
Cut into thin slices; cool slightly. Place in a large salad bowl with lettuce, onions, cucumber and red pepper, set aside. In a cup, combine olive oil, lime juice, dill and remaining 1 teaspoon salt and ⅛ teaspoon black pepper; pour over salad; serve immediately.
