1Endive or head of lettuce
2poundsPotatoes; peeled
½poundsSmoked bacon; diced
3mediumsOnions; chopped
½cupWater
Salt & pepper to taste

Directions

Boil potatoes in salted water. Cut endive in small, longish pieces. Fry bacon & onion until golden brown. Mash potatoes, add half of bacon mixture & the water. Add endive & mix; salt & pepper to taste. At serving time, top with remaining bacon mixture.
