Spicy bean curd with minced beef

3tablespoonsOil
4ouncesLean beef -- minced
1tablespoonSalted black beans
1tablespoonChili paste
1tablespoonSalted soy beans
1tablespoonGinger root -- very finely chopped
1teaspoonGarlic -- very finely chopped
3Green onion -- finely sliced
1cupChicken or beef stock
1tablespoonBlack soy sauce
½teaspoonSalt
2teaspoonsCornstarch -- blended with water
1teaspoonPowdered sichuan
Peppercorns

Directions

Cut the bean curd in ¾" dice. Heat oil and stir fry beef and black beans for 3 to 4 minutes. Add chili paste, salted soy beans, ginger, garlic and green onions. Stir fry for another 2 minutes, then add the stock and bean curd. Simmer for 5 minutes, season with soy sauce and salt, then thicken with cornstarch. Sprinkle with sichuan pepper and serve.
