Spiced scallop stew

Ingredients

1tablespoonExtra virgin olive oil
1poundsBay scallops
¼cupWhite wine or water
1cupReserved mushrooms from Braised Kale
cupReserved Caramelized Onions
½cupReserved Red Hot Pepper Sauce
1tablespoonParsley -- chopped
½Lemon -- juice only
Salt and pepper

Directions

Heat the oil in a large saucepan until smoking. Add the scallops and cook for 30 seconds. Add the wine or wtaer and heat until simmering, about 30 seconds. Add the reserved mushrooms, reserved onions, and reserved red pepper sauce. Heat until simmering. Add the parsley and lemon juice and season to taste with salt and pepper.
