Spanish white bean soup #2

Yield: 1 servings

Measure Ingredient
2 cups White beans note)
7 cups Water
1 \N Onion, chopped
6 \N To 7 cloves minced garlic
2 \N Potatoes, peeled and chopped
8 ounces Can water-packed artichokes drained
4 ounces Can sliced black olives, drained
8 ounces Can tomato sauce
1 teaspoon Italian herb mix

place the beans in a large pot with the water. cover and cook over medium heat for 1 hour. add the onion and garlic and continue to cook until the beans are tender, 1 to 1½ hours. add the potatoes and cook another 20 min. add the remaining ingredients and cook for about 10 more min.

note: if you soak the beans overnight, the total cooking time may be reduced by 30 min.
