Spambalaya (tm) jambalaya with mahatma (r) rice

| 1 | cup | Chopped onion |
| ⅔ | cup | Chopped green bell pepper |
| ½ | cup | Chopped celery |
| 2 | Garlic cloves, minced | |
| 1 | can | Cajun style or regular stewed tomatoes (14.5 oz) |
| 1 | can | Lower sodium chicken broth (10.75 oz) |
| ½ | teaspoon | Dried leaf thyme |
| 8 | drops | Hot pepper sauce |
| 2 | Bay leaves | |
| 1 | cup | MAHATMA Rice |
| 2 | tablespoons | Chopped parsley |
Directions
In large non-stick skillet or 3-quart non-stick saucepan, sauce SPAM Luncheon Meat, onion, green pepper, celery, and garlic until vegetables are tender. Add tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaves. Bring to a boil; stir in MAHATMA rice. Cover.
Reduce heat and simmer 20 minutes or until rice is tender. Discard bay leaves. Sprinkle with parsley.
