|1 can||SPAM Lite Luncheon Meat, cubed (12 oz)|
|1 cup||Chopped onion|
|⅔ cup||Chopped green bell pepper|
|½ cup||Chopped celery|
|2 \N||Garlic cloves, minced|
|1 can||Cajun style or regular stewed tomatoes (14.5 oz)|
|1 can||Lower sodium chicken broth (10.75 oz)|
|½ teaspoon||Dried leaf thyme|
|8 drops||Hot pepper sauce|
|2 \N||Bay leaves|
|1 cup||MAHATMA Rice|
|2 tablespoons||Chopped parsley|
In large non-stick skillet or 3-quart non-stick saucepan, sauce SPAM Luncheon Meat, onion, green pepper, celery, and garlic until vegetables are tender. Add tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaves. Bring to a boil; stir in MAHATMA rice. Cover.
Reduce heat and simmer 20 minutes or until rice is tender. Discard bay leaves. Sprinkle with parsley.
