Spaghetti squash carbonara

Yield: 1 servings

Measure Ingredient
⅔ cup 10% cream
2 \N Eggs
⅓ cup Grated parmesan cheese
1 \N Spaghetti squash
2 cups Broccoli flowerets

Beat cream and eggs together in medium saucepan. Cook and stir over medium heat until thick. Stir in parmesan. Split squash in half.

Remove seeds. Place cut side down in microwaveable dish with a little water. Microwave on high for 10-12 minutes. Cook broccoli on high power for 4 minutes. Let stand. Scoopout strands of squash onto serving plates with a fork. Top with broccoli and sauce. Garnish with bacon, parsley and additional parmesan. Makes 2 servings.
