1 cup | Cornmeal |
¼ cup | Sugar |
1 teaspoon | Salt |
4 cups | Milk |
½ cup | Margarine, melted OR vegetable oil |
4 eaches | Egg yolks, slightly beaten |
4 eaches | Egg whites, beaten stiff |
Combine cornmeal, sugar and salt in a saucepan. Gradually stir in milk and shortening. (Stir in gradually to avoid lumps). Cook and stir constantly until thickened like mush. Remove from heat. Add small amount of hot mixture to egg yolks, then add yolks to hot mixture, mixing well. Fold egg whites into mixture. Pour into a greased 2qt. baking dish, and set dish in a 9" square or other dish of hot water (Bain Marie) . Bake at 375 degrees for 35 to 40 miniutes...... Serve with butter.
